Makes 4 Scones

Ingredients:

  • 250g plain flour
  • ½ tsp salt
  • ½ tsp bicarbonate of soda
  • 250ml butter milk (sour milk) approximately
  • 1tbs sunflower oil

Method:

To make sour milk add 1dessert spoon white wine vinegar to 250g full fat white milk and leave overnight.

Mix the flour, salt, soda and buttermilk lightly and quickly to give a soft but not sticky dough. Turn out onto a well-floured surface, cut in half. Roll each half into a square 1cm/2cm in thickness, cut into four, place on a heated griddle. Bake for 3 to 4 minutes on each side. Put a dry cloth over the bread while cooking, this helps it to cook through
